Quick Shortbread

One of my favorite late night, just for myself treats. I can do it just for myself because it mixes up so quick and easy and can bake and cool in under an hour. You can also play a lot with a shortbread recipe and add toppings, icing or even hide fruit in the dough to make a shortbread surprise.

Buttermilk Pie

One of my favorite holiday pies. I’m not sure why it’s become a holiday tradition. It’s super easy to make and doesn’t require a lot of special ingredients. I have researched some recipe’s online and tried one. It was good, but when compared to the old family recipe, and I may be bias here, it just didn’t hold up.   I don’t know what to call this. My wife commented the other day that she liked the dirt cake that I made for the kids birthday, but doesn’t like Oreos. So I told her I could whip up a batch of the filling without the cookie crumbs if she wanted. So I whipped up a small batch in a zip lock bag and squirted it into cupcake paper on top of gram cracker crumbs. Low Allergy Impact Chocolate Chip Cookies

  1 1/4 Cups Flour 1/2 Cup Brown Sugar 1/2 Cup Earth Balance Soy Butter 1/4 Cup Sugar 1 Egg (replacement) 1 Teaspoon Vanilla 1/2 Teaspoon Baking Soda 1/2 Teaspoon Salt 3 cubes of fancy Bakers Chocolate (no milk ingredients, but is processed in a facility that uses milk) Simply mixed it all together and baked at 375 for 10-12 minutes. It did cause a reaction in our son, but it was mild. It seemed worth it to have had his first chocolate chip cookie, but I don’t think there is such a thing as a milk free chocolate chip, so we won’t add it to our normal treats...
